Fried Antipasti
Here in Italy, pizza always begins with an antipasti of some sort, and that antipasti is usually fried. Classics include fried zucchini flowers stuffed with mozzarella and anchovy or the quintissential Roman suppli: tomato risotto which has been stuffed with mozarella and then rolled in breadcrumbs. When the tomatoes are fresh and the basil is ripe, a simple bruschetta with local oil is also a celebrated antipasti to be enjoyed before pizza.
